Eating healthy during treatment can be a challenge, but with a little planning, you can create delicious make-ahead lunches that not only taste great but also help you retain essential nutrients. Cook the rice and lentils. I usually let the lentils cook/ soak for 30 minutes and then drain/rinse. The rice may need to soak for a little bit without heat so the water doesn't burn off too fast leaving you with crunchy rice. I boil the sweet potatoes until soft.
I bought a steamer and steam everything! The broccoli and llli- sprouts take about 10 minutes to cook and come out soft but not soggy. I actually air fry my chicken breasts - 7 minutes on 390 degrees each side and it come out super juicy and fully cooked,
Instructions
3 large organic sweet potatoes
2 large bundles of organic broccoli
4C cooked Basmati organic brown rice
2C cooked lentils
2 Bags of Organic Brussels Sprouts

Fresh Garlic Cloves - minced to tast
2 Chicken Breasts - cooked
Garlic Salt

This is my go-to "recipe" for pre-made lunches. I make ten of these every two weeks. I simply put them in the freezer and then thaw one at lunch time. These lunches pack a punch with fiber, antioxidants,
vitamins/minerals, and aids digestion - just to name a few!
